Alex Bayer saw illness all day long—in the form of the insurance claims that crossed his desk day after day. He was appalled by what he saw as a general decline in the health of Americans and decided that he did not want to be a part of it. He became a “health nut” (his term) and began blending and stocking up on smoothies to silence the “call” of fast food drive-thrus and way too convenient convenience stores. He and his health-conscious friends shared smoothie recipes, and one day Alex had his first organic coconut smoothie. Only two ingredients, coconut water and coconut meat—so good that he exclaimed, “This is genius!”
