It was an ordinary Saturday morning. Erica Barrett was out bright and early, shopping for the ingredients she needed to make her specialty pancakes for breakfast. It took a lot of time and a lot of money, and Erica thought, “Why?” Why did it have to be so much trouble and so expensive? There was her challenge, and it coincided with a nagging feeling that it was time for her to move on from her well-paying corporate job and “follow her bliss,” cooking. She was always happiest in the kitchen.
Erica founded her business, Southern Culture Artisan Foods, and produced ShortStacks, specialty pancake and waffle mixes with unique flavors such as Birthday Cake, Bourbon Salted Pecan, Peanut Butter Chocolate Chip, Banana Pudding, Meyer Lemon Blueberry, Pumpkin Spice, Sweet Potato and Red Velvet. All the ingredients are all natural and organic. No dairy products are used, so the pancakes and waffles are safe for all diets. The mixes work just as well with buttermilk, almond milk or soy milk, and you can use an egg substitute and vegetable oil.
Later, Erica expanded the company to include their own 100% pure Grade A Dark Amber Maple Syrup, Bacon Rub, Stone Ground Grits, Fried Chicken Mix, Corn Bread Mix and Whole Bean Specialty Coffee.
